Description: To kick off the holidays “tastefully,” Island SPACE Caribbean Museum is collaborating with Caribbean Professionals Network and a number of South Florida bakers to present the Rum Cake and Caribbean Black Cake Fest. Cake makers will offer tastes of traditional Latin-Caribbean rum cake recipes as well as the dark fruit cake or plum pudding recipes popular in the British Caribbean islands, and affectionately known as “black cake” to many Caribbean nationals

Rum cake supplier declared Aldi’s Next Big Thing​

Aldi Next Best Thing winners Harrison & Griffiths

Nottingham-based rum cake supplier Harrison & Griffiths has won a supermarket listing in the latest episode of TV show Aldi’s Next Big Thing.
The Channel 4 show gives independent food and drink producers from across the country the chance to present and pitch their products to Aldi.
The most recent episode focused on baked goods and featured six businesses that had been selected from hundreds of entrants.

Harrison & Griffiths, which was co-founded by Colin Harrison and Paulette Griffiths, was named the winner after Aldi managing director of buying Julie Ashfield declared their rum cake “the best product I’ve eaten in the history of products I’ve eaten”.
“I was absolutely blown away by their product,” she added. “After the pitch day, I told everyone I met about it. I couldn’t get over how wonderful it tasted.”

The Caribbean fruit cakes business was co-founded by Paulette Griffiths and Colin Harrison
Harrison and Griffiths, who have a combined total of 25 years’ baking experience between them, have been making rum cake together since 2016. The Caribbean fruit cakes showcased on the show are based on Harrison’s mum’s recipe but have been tweaked over many years.
They produce the finest Jamaican Rum Cake which is infused with Wray & Nephew White Rum.
The cakes are usually produced at a rate of 250 a week by the duo at home. After winning the show they worked with Aldi’s supplier to scale up production to produce the 30,000 cakes that have just been rolled out to 970 stores

Bacardi has partnered with the family of Jean-Michel Basquiat to showcase the deceased New York artist’s work on a limited edition pack for gin flagship Bombay Sapphire.

The bottle, which is on sale in unspecified US markets from this week, features Basquiat’s ‘Untitled [LA Painting]’. The activation, which forms part of Bombay Sapphire’s ‘Sir Creativity’ campaign, runs alongside the brand’s sponsorship of an exhibition of Basquiat’s works in New York City.

After offering cooking lessons to Ludacris last year as part of the Atlanta rapper’s Discovery Plus special “Luda Can’t Cook”, James Beard award-winning chef Meherwan Irani (Chai Pani) recently collaborated with another rap artist and entrepreneur to create a trio of wing dry rubs.


Irani and Grammy award–winning rapper T-Pain joined forces to concoct three rubs for the chef’s spice company Spicewalla, which are set to hit the market on Black Friday. The collaborative spice blends from this dynamic duo are being dubbed a “Magic City-worthy [wing] flavor explosion.”

Here’s the flavor breakdown:


Sugar Daddy
A honey garlic rub made with brown sugar and honey and hints of garlic with kicks of red pepper and cayenne. Irani and T-Pain also say this wing mix is good sprinkled on grilled salmon and roasted sweet potatoes.


The Juice
A pineapple habanero rub blend that’s tangy with hints of sweet heat from brown sugar and minced jalapeno. Beyond wings, Irani and T-Pain recommend using this mix on grilled steak or stirred into a Bloody Mary.


Straight Fire
A Buffalo-style rub made with a smoky and spicy blend of smoked paprika, Kashmiri chilli powder, garlic, onion, and cayenne, offering a slow building heat on the palate. While a solid choice for wings, Irani and T-Pain say to try it on steaks and even as beer rims.


A package of wing rub trios costs $29.99 and is available online and at both Spicewalla locations in Ponce City Market and Grove Arcade in Asheville, North Carolina, starting Friday, November 25.

Cuban light rum emerges in 1862 in the city of Santiago de Cuba. Since then, there has been an uninterrupted transmission of the Cuban light rum masters’ knowledge, which is put into practice in aging cellars, mixture areas and laboratories. The Cuban light rum masters’ knowledge is a set of traditional, scientific, sensory knowledge and techniques transmission that ensures the safeguarding of the Cuban light rum manufacturing process. Regardless of brand, light rum masters follow an ethical code centred on respect for Cuban rum culture and its history and good practices, with ecoculture and harmony with the environment at its core. The transmission of light rum’s master knowledge is a life-long learning process that is passed down from generation to generation and includes protecting aging cellars, knowing their contents and characteristics and the history of each barrel, and knowing which mixtures result in a given appearance, aroma, taste and texture. Masters form a guild-type community with selective admission that advocates for responsible consumption and acts as a cultural bridge between Cuba and the rest of the world.
