If you peep the Blade 2 Commentary track with Snipes and Goyer when they were both cool with each other they explain the story about it. Snipes was in Germany doing press/distribution for the first Blade movie and some German cat ask him that. Snipes stated in the commentary track that German cat got a nice tongue lashing for saying it. When Snipes got back to America he told Goyer about it and he decided to add that line into the Blade 2 script.
