ultron is clearly a tony stark production in this version of the story.

It's not pure adamantium it can brake. it has been broken before....

Cap's Shield is actually more durable than True Adamantium in the comics (it was originally made of a combination of Wakandan Virbranium and Proto Adamantium); however that's a moot point, as the shield is just Vibranium in the movies.
