You can, it’s a long process and can just be undone with bad diet, but it is possible. The reason they say it cannot be done is so everyone who can, does not go back to eating how they originally did:You can't reverse it, you can however put it in remission. Once you have diabetes you will always have it and need to watch your numbers. Cut down on sugars, I'd cut almost completely low carv walk workout you will be fine
The NHS in the UK have started to undertake the “soups and shakes” as a main method of T2 control. But not the pancreas’s insulin resting, which is still checked only with private blood tests.
