i deposited 300 xvg on my binance
the history says the deposit was complete
but it still says my amount is 0 and i havent gotten a confirm email saying its been deposited

Nah, no one would put effort into stealing 300 xvg. The deposit may be "complete" but the exchange still has to "process" it. When you send coins to exchanges it's goes to a giant purse first before it's distributed to the proper addressvc. It's very different from depositing into something like a metamask wallet where you own the private keys.

No need to guess. Just look at the buy/sell orders and see how it's trending. Get familiar with stop limits to protect yourself from dumps and to sell for higher prices during spikes.
