All my favs have been posted, so I'm gonna go with one that I think is madly underrated, and that's his Young, Gifted & Black freestyle.

[ame="http://www.youtube.com/watch?v=leUFRB2womg"]S.Carter Collection - Jay-Z - Young, Black, & Gifted Freestyle - YouTube[/ame]

I'm America's worst nightmare
I'm young, black, and holding my nuts like "yea!"
While ya'll was at the pub, havin' a light beer
I was at the club, havin' a fight there
Ya'll can go home, husband and wife there
My momma at work tryin' to buy me the right gear
Nine years old uncle lost his life here
I grew up thinkin' life ain't fair
How can I get a real job, china white right there
Right in front of my sight like here, yea
There's ya ticket out the ghetto take flight right here
Tell on me,and you go bye-bye here, damn
There's a different set of rules we abide by here
You need a gun, nikkas might drive by here
Ya'll havin' fun, racin' all ya hot-rods there
Downloadin' all our music on ya iTunes there
I'm Chuck-D, standin' in the crosshairs here
Ya'll straight, chicks got horse hair here
Ya'll ain't gotta be in fear of ya'll bosses there
You lose your job, your pop rich, ya'll don't care
So I don't care, ya'll acting like ya'll don't hear
All the screams from the ghetto, or the teens ducking metal here
So they steam like a kettle here
Trying to take they mind to a whole different level here
Yea, we real close to devil here
Got to be a better way somebody call a reverend here
My little cuz never got to see his seventh year
And I'm so used to pain, that I ain't even shed a tear

all the ones posted are correct, but i'm surprised nobody mentioned "no hook"

I'm so fa sho, it's no facade
Stay outta trouble, momma said, as momma sighed
Her fear? her youngest son be a victim of homicide
But I gotta get you outta here momma, or I'mma die ...inside
And either way, you lose me momma so let loose of me

i refuse to conform
dynasty intro

The theme song to +The Sopranos+
plays in the key of life on my, mental piano
Got a strange way of seein life like
I'm Stevie Wonder with, beads under the doo-rag
Intuition is there even when my vision's impaired, yeah
Knowin I can go, just switchin a spare
On the highway of life, nikka it's sharp in my sight
Oh! Keen senses ever since I was a, teen on the benches
everytime somebody like Enus was mentioned
I would turn green, me, bein in the trenches
Him, livin adventureous not worryin about expenditures
I'm bravin temperatures below zero, no hero
No father figure, you gotta pardon a nikka
But I'm starvin my nikkaz, and the weight loss in my figure
is startin to darken my heart, bout to get to my liver
Watch it my nikkaz, I'm tryin to be calm but I'm gon' get richer

the rhyme patterns were ridiculous

Hovi baby is defintiely up there and is one of his more overlooked songs. I guess cause so much of the BP2 was ass. Not an official song but his version of Maybach Music 2 is another tight one too.
