I was lucky enough to visit Fukuoka, Japan where Hakata (pork based) ramen was invented. They had a ramen food court with nothing but Hakata ramen. It was one of the most flavorable dishes I've ever eaten.

From my experience probably just the noodles. Everything else is kind of interchangeable.
I have more experience with Pho than Ramen though
