Seen a lot of people mention Shawn turning on HHH and I don't understand what would be the point. Dude is a beloved retiree, occasionally stops by to add to a feud, most likely never having another match. What would come from turning him heel and suddenly aligning with Lesnar?

It wouldn't be to align with Lesnar but rather to build a match between himself and HHH at Wrestlemania.
