1 penny doubled = $.02
Each day, you make an additional $.01 or double the value of the 'Magic' penny. Day 30, you've made $.30 + the $.01 you started with for a grand total of $.31.
Why?
Because the question doesn't state that ALL THE OTHER PENNIES DOUBLE.
Just.....that.....one.

I wondered the title and immediately thought the same way.. The way he worded it, means the PENNY doubles in value each day... Not that the sum of the double, is also doubled.. Not to mention that he doesn't state it compounds each time either...
So in trying to be a smarty art nikka, he fukked up by asking the question wrong, and ruining the whole 2nd grade answer that we all knew if we weren't paying closer attention
EDIT: Nope you're wrong.. He said the value of the penny increases.. Not that the penny doubles.. We back at square one.. They are correct

the (single) penny doubled in value … it doesn’t say the penny split and gave you two pennies… if it’s value doubles then it works
