I guess cause they are more difficult to the average person then bench press and dumbbell rows.
Same reason why you see everybody benching but not many people doing military press.
It's too much of a pain in the ass and time commitment trying to do weighted pull ups / dips so I just do a couple of sets as burn outs here and there. Once you start to get to where 20+ dips are easy then you mostly stay towards heavy barbells and Dumbbells

It can look like something that is difficult to track progress on
