I know they are out of order in terms of storyline But should I watch it on the order they were release or watch it in the order of the storyline? They explained it in the old movies, and showed it in Episode III - I mean, it's all there
The physicality - Obi-Wan, being a normal 'humanoid', was probably in his prime at Episode III. He focused 20 years on becoming stronger in the force. Yoda was dying by the time of the older movies.
Obi-Wan learning that forcepower was the smart move. It helped blow up the Death Star, lead Luke to Yoda and he made sure Luke would confront the Emperor.

To add on, Obi-Wan and Yoda were in no shape to take on the Empire. Palpatine's smear campaign worked so well that no one knew who or what a Jedi was after about 20 years or so.
All they could do was wait and hope that the twins would be enough to overthrow the Emperor.
As for their depleted skills, they realistically stopped physical training for 20 years, so that would be like saying Terry Bradshaw looks horrible to play in today's modern NFL....but he would still be a more accurate passer than 90% of the population....

Most of the people living in the galaxy have never seen a Jedi before. Yeah there were a lot of them on Coruscant because thats where the Galactic Senate and Jedi Temple was located but all around the galaxy, they werent around. There are easily over 100 billion planets in a galaxy, add in moons and you have an absurd number of possible settlements. There were about 10k people that could be considered jedi at the time of the clone wars. Thats 1 for every 10 million planets.
So you have these crazy sounding stories about people following a religion you never heard of (witnessed) combined with your government telling you its a bunch of bullshyt, and you can see how most of the galaxy acts like they never existed.
The Jedi were regulars of the galactic senate, they were brought in to solve a trade dispute
the order had been around for THOUSANDS OF YEARS AND WERE LOCATED AT THE CAPITAL OF THE REPUBLIC
