I gotta go with the potato for its versatility.

You can cook it a thousand ways, or turn it into vodka. You can put a few of them in a burlap sack and make yourself a weapon. Hell you could even turn a bag of potatoes into a battery if you were really hard up for some juice to charge your cell.

Potatoes basically stopped famines in Europe starting in the 18th century. Some go as far as to say it was a key component in the industrial revolution and, unfortunately, in the colonial expansions, given that it's easy and cheap to massively produce for workers and soldiers, including in harsher environments, and to stock.

You can have the raw and crispy fresh on burgers, salads, tacos, etc.

You can have them stewed with rice or chili

You can have then fire-roasted with barbeque or other cuts of meat

You can have them sauced on pizza or pasta or any other italian food

Low-key they're an essential component of most Indian, Chinese, and Middle Eastern food


And they're one of the healthiest vegetables out there with lycopene, potassium, beta carotene, antioxidants, and other vitamins


Broccoli, spinach, and onions all up there too.
