Well you can’t expect a 1:1 anime adaptation. That is kind of silly. Anime can add a lot of elements that can be very tough to digest.I had that same adverse reaction to reading stuff that a lot of people have here initially. Bought a Kindle and read began reading a series I knew was unlikely to ever get a second season and evolved from there. I mostly read comedies and well adapted timely released anime versions are very rare. Anime tends to butcher, speed through, and cut out a lot of content. It can't help it being a derivative product. Usually the choices made for an anime adaptation are not for the better.
To me reading actually enriches the anime watching experience. When you read the original work first you get the full story and watching the anime becomes more about seeing your favorite scenes brought to life. When you only watch the anime the entire experience is about the novelty of seeing things for the first time.
I guess another way to put it is it's kinda like watching a movie you like more than once. Just because you know the plot on that second viewing doesn't diminish the experience. You may actually notice and pick up on more the next time.
All things considered equal watching will be better but in 85-90% of cases watching is the inferior version of the story with questionable editing choices that takes way longer to tell.
You are always going to have to make sacrifices in an anime adaptation. But look at 86, MT & Demon Slayer. When an adaptation is done right it is something that is beautiful and elegant to watch.
Also the only time people bring up the source material is source readers that want to nitpick every little thing. Unless an anime is ass those who are only watching the anime very rarely ask for a comparison to the source.
