I've watched an absurd amount of anime and I can say with confidence Iron Blooded Orphans is the best ending I've seen in anime. Most series don't have the balls to give such an ending or in the case of Death Note don't have the balls to give you the ending we all know should have happened but with IBO when it ended I was like "yeah that's the way it should have played out" and it just felt right even if it was a bit unpleasant. You can say what you will about the series quality overall but those closing episodes of the second season were spectacular.
I really liked Stellvia's ending too. Shame we didn't get the sequel it teased. Same with The Pet Girl of Sakurasou which had a similar ending and sequel tease that will never happen.
Code Geass is also right up there with IBO. It felt right.
The final scenes of Your Lie In April are unforgettable. Probably the most emotional impact of an ending I've seen in an anime. Plastic Memories comes close to this too. I can also remember Angel Beats having a memorable ending. One of the only Key shows to hit me in the chest. Never watched After Story though.
My Teen Romantic Comedy SNAFU. I can't say I loved the last season but the confession and ending were masterful.

Gundam Thunderbolt is its own little world, not really connected to Universal Century but in that world. It's a good watch, just make sure you watch MSG before you get into it.
Forewarning,
Most Gundam shows are/will become extremely depressing/dark. The only Shounen thing about all of them outside G Fighter is that your protagonist 8/10 will be young.
Personal Opinion:
Everything before Unicorn is great. Unicorn, while introducing some of the best-looking Mobile Suit designs (Jesta is one of the best Mobile Suits, first Gunpla I ever built), falls apart. A concept introduced back in the OG series ()becomes this overpowering force where it marginalizes every character and other concepts that don't fall under that umbrella and makes them either meaningless or forgotten. Tomino's love for this bullshyt causes Unicorn to have one of the most powerful MCs who pretty much stomps everything with no struggle because he is pretty much God. Can't forget about the fact that his suit is specifically designed for those who are like him. Also kids have Talk no Jutsu in this shyt and are pretty much the driving force for everything.Newtypes
Outside of like 00 and SEED, your MCs are pretty much cogs in the machine and every series benefits from it.
I suggest starting with MSG the Origin. Tells you how everything began, 6 episodes (hour long each), is an OVA series so the quality is high.
It's kinda like the Kizumonogatari of Gundam, if you've seen that.
