Not sure if it's specific to just Gen-Z, its a "I used to work in service so I know how it is" thing.
This. If I dont want something when I get to checkout, I walk back to the aisle and return it. I stack plates in restaurants and even wipe down crumbs. It costs me near zero effort to do as opposed to how much it wore me down when it was my job to do it 100x a day.

If one person is paying for his fam/friends group, and drops about 200 and leaves a 50 to 60 dollar tip, the server shouldn't even be concerned about bussing a table. Especially if the table was only there for an hour.

It's just content for clicks at the end of the day. If you asked a restaurant owner or manager, I'm certain they will say that this behavior isn't exclusive to any generation
