I think the 1st-century Egyptians are largely the same as today's Coptic Christians. They can demonstrate their historic and familial continuity from the 1st century until now and there's no real evidence that I'm aware of for any major migrations that would account for a radical change in either direction. Since the Coptic Christians are the ones that refused to convert to Islam, any influx of Arabs after that point would only have a minor impact on their line.
Now, Coptic Christians themselves are pretty diverse, and you can see ones who could pass for black or mixed as well as ones who could pass for Saudi or White. Especially the ones from the south and/or Sudanese border are darker than the ones from near the sea.
Before the 1st century? It's hard to say. That region was already mixing a lot with people traveling all over the Mediterranean for hundreds/thousands of years before the 1st century, so I would believe it if 1st century Egyptians were already more mixed than earlier Egyptians a few thousand years before. I believe that they've sequenced some mummies and found them to be reasonably similar to modern Egyptians, but that's a small sample size and I can't say I've studied the issue in depth.
