Not even necessary, breh. Just let your current subscription expire. Really, the key to being able to stack via the conversion trick is just not having an active GamePass subscription.
I let mine expire in April, fukked around and ended up waiting a month, then just copped a couple of 12 month XBox Live Gold cards from Amazon for $60 each, redeemed them, and then enrolled in GamePass Ultimate right from the dashboard. It instantly told me it was going to convert my time I had literally just purchased of Gold to Ultimate, and then charged me for the one month of Ultimate.
Really, aside from making sure the account you're using doesn't have an Active GP sub, you just want to make sure you're not going to go over 36 months with the month of GP you'll be buying to convert.
I imagine there are better hustles out there somewhere, but I couldn't find them, and paying less than half retail price for two years is a win for me.

Maybe they just said that to curtail the masses? You just did this or a couple months ago?

I would assume so, I'm thinking as soon as they release the family plan in the US they'll do away with these other methods.
On one hand they need more subs, but after they get comfortable (which is when they'll deploy Fam plan) it makes too much sense for everyone to move to that model. As in I don't expect too much pushback.
With that said, I think I'm going to up my OG account for the next 3yrs. I was wrong about my secondary, it ends next year not in 25' so
