If you're going to go all in on color grading then Davinci Resolve (that's what I've been using now for a year).
If you want the easiest "plug and play" program out there, you can't beat Final Cut Pro (I used it for 5+ years and built a 6 figure business that I now work full time).
Adobe Premiere is a great middle ground between the two above however, I've never been a fan of their UI.

Wedding season getting ready to start.

Finally finished the migration from Panasonic to Sony

Now have two a7siii's . Running a 24-70 sigma on one and a 70-200 g master on the second

Thanks sir. Last season I had been running with one a7siii and one gh5s. Then once I got the 70-200 g master I started renting an available Sony body towards the end of the season, usually a a7iii or an a7iv.

a7iii has a 30 minute recording limit and the a7iv has shut off on me indoors during an event

Glad not to have to rent anymore and I have the cameras I want , just have to sell all the Panasonic stuff now

Yeah def can’t have the equipment dying on you mid shoot and you miss the moments!

I’m considering getting the a7siii to dive into the video world - the output is amazing

So shooting a few interviews of people on Sunday in regards for our new building.

Better to use manual focus focus and then record or with a modern camera and fast lens auto focus is good?

If just really focusing on the neck head and above is a lower aperture ok ?

Is a 85mm best for focal range or is 50mm better?

I use manual focus 95% of the time. (The 5% is for certain gimbal or slider shots)
Depending on how much your subject is moving it shouldn't be a problem.
If you're shooting and doing the interviews by yourself then try to shoot at 2.5 - 3.5.
I like shooting wide open when I can be on the camera or have someone else on the camera pulling focus as necessary.
I've been in a ton of solo shoot situations though so I understand the trade offs. Priority is for your content to be exposed properly and in focus.
Bokeh is pointless if the whole image is soft or just completely out of focus.

As far as focal lengths...I like to shoot with a 35mm for a wide shot and a second camera with a 50-100mm lens.
It really depends on how much space you have.

35mm and up is ideal but honestly, I've been in almost every situation imaginable and I'll say it really boils down to the space you have.
Alot of times its "beggars cant be choosers" and you have to be ready to adapt.

anybody here have one of the modern point and shoot cameras like the Sony RX 100 series or like the canon G7x's? I seen some for cheap-ish online and thinking about grabbing one. But they seem like a couple generations behind in terms of tech. Something i have toss in my pocket and not have my hold camera bag.

Just seeing if anybody here has any experience with them or what are yall's opinions.

I have an x100v. It’s my favorite camera.
