If those suits are bulletproof why doesn't he wear a bulletproof mask. And bullet proof shoes and gloves.

Also what material is this? That allows these people to move this way but can also block bullets.

Why doesn't every single person in this movie dress in this material?

In the 2nd movie John got kevlar in the lining of his suits when he was in Rome. I guess they expanded on it b/c he wasn't using it like the High Table assassins were in this movie.
