You can't assume that's Kofi's fault. I get where you’re going but you can’t act like Miz has a Jericho-like ability to bring a new character to the table. He’s mostly been the same character for over 10 years dating back to when he first broke out as a legit singles guy. New Day in its current state is a major departure from the bullshyt preacher stuff Vince wanted them to do initially that was getting them trashed.
That said, you’re not wrong about New Day being stale. It’s a much trickier subject than it seems on the surface though. As Kofi, E, or Woods, I can’t say I would be advocating for a gimmick change when none of their creative success so far is due to WWE. They’re only in their current situation (in New Day) because they had to beg Vince to let them control their characters. And that’s not even considering the bigger issue of them being in a company that has a history of black talent mismanagement, evidenced by how shytty they just handled Kofi’s reign.

Miz had a tough road to a degree but he always had that reality star shyt in his back pocket as a justification as to why wwe never gave up.
Kofi was an Indy wrestler who came up and never at one time was given any real push besides mid card shyt. Same shyt with Shelton besides a few triple h wins and was always held back because he wasn’t great on the microphone. Yet jack swagger was given more chances and they both come from a horticultural backgrounds and weren’t special on the mic.

Kofi wasn’t Jamaican in the Orton feud. Go watch the video again when Kofi destroyed the race car. Between then and New Day in 2014, he was either in never ending matches with Ziggler/Miz or in thrown together tag teams. He never had a storyline or any mic time, so how could he ‘evolve’? You can only evolve when you have stories and mic time
