I don't think i'm that nice on a range, but I'm realizing through that humility I've learned to keep it simple and do it perfectly. I really don't attempt to serve anything I know I can't do perfectly. Close enough ain't close enough to me. It has to be perfect, luckily my two chefs feel the same way. I like working under that pressure because when I do something right I know it's because I've practiced for hella hours to get it down. What's funny is I learn everything on my own TBH. I look up something and I start playing with it. Then my chefs come and give me pointers. Nobody has sat me down and walked me through anything. I drive my own education.

I recently found out I make as much some head chefs with 20 plus of experience. LOL I don't make that much money and that's really sad. Because I'm going to grow a lot as a professional this year and my pay rate will not increase unless I generate more money. There are great chefs who make shyt money. There's people with college degrees in this shyt and they couldn't get one job I've had in a kitchen or move up in the chain of command like I did.

Working in a kitchen isn't really about skill TBH, it's about knowing what you can and can't do. I think all cooks have a basic skill set and then they're specialists. I don't fukk with fine dining. It's 10% of food and not worth the investment to dive into for me. I want to master the basics. Tomato soup is boring but a perfect tomato soup will make more people happy than some fancy fukk shyt. LMAO IDGAF how much cream or fat something is cooked in.

People over complicate food all day and fukk it up. fukk all that fusion bull shyt. fukk paying hella money for some food. I like my food simple, cheap, and perfect.

I may never win a michlin star but my shyt is going to be hot in the streets. I want to be the Dip Set of food. I do it for the streets.

Food is mad racist too. Fine dining is basically European food and anything not white is considered street food or slop. The irony of it all is hilarious to me because history shows a lot of "european comfort food" which is fine dining was food of the poor. Especially Italian food.

Go to a fine dining spot and try to get some black or mexican food. You might get laughed at and you'll definitely be insulted. That's really why I don't fukk with it. Some restaurants refuse to serve fried chicken or hamburgers because they think it''ll lower the value of their menu. What they mean is it'll attract a crowd they don't want.

These black foodies are lost nikkas. For real. Ironically high end chefs love street food because it's straight to the flavor and its accessible to everyone. Most these nikkas make tacos in their free time but won't put it on a menu.

I wanna slap the fukk outta my co-worker for saying some Kodak Black type c00n shyt :hhh:

He said he'd take Cardi B over Amara La Negra. First off, Amara looks way better. But it was his reasoning that pissed me off.

He was like "Amara looks good, but I'd rather have Cardi. She a true Spanish girl. If I wanted somebody like Amara, I would just get a black girl"

Kinda reminds me of Kodak Black when he said "Where the yellow bones at? I don't want no Black bytch, I'm already Black!" :hhh:
