The bigger the menu the harder to streamline the production in the kitchen. Try to set things up as efficient as possible because people underestimate the amount of work. There is nobody there to pick up the slack, you and yours have to do all of it, make all the decisions. Things that can be partially or completely premade help a lot (for the day or several days). People want fresh but fresh takes man power during the operating hours and have longer waiting time for the costumer.
