There's 7, with an 8th on the way, and a couple other movies, TV shows, games, comics, etc..truly it's own universe.
Start with the original trilogy, episodes IV, V, and VI, They tell Luke Skywalker's story. Though a little dated, they are a cornerstone in pop culture.
