Probably the worst part about working for someone else. At any given moment they can let you go and destroy your stability for no good reason.

This is why, in all forms of life, you have to look out for yourself. Don't think because you put in a two week notice, they will respect it and let you work it out, they may fire you that day. Read the situation as best you can and play the game accordingly. If quitting on what would theoretically be the last day of your two weeks is what is best for you, don't be afraid to fly, do that shyt brehs.
