Because the other 4 guys on the court can be argued to be a part of an All defensive team. The gap in defensive ability between Curry and the other 4 guys are probably higher than any other team in the league.

This is also true. As a result of this Steph is "hidden" on defense. Defense is as much about your physical attributes as it is your fundamentals. You can be the greatest defender ever and be 6'1" 190 lbs and still get bullied on defense, so Steph being smaller than those guys as well as Harden is also a huge factor.
