Focus on the realism of an unstable ex-soldier on a semi-justifiable but clearly overdone revenge mission.

I would cast someone who wasn't a "big name" because I really don't think that would work. I'd go with someone like a Milo Ventimiglia. he is known but not a major star, he is underrated in terms of acting talent, he is around the right age, looks sorta like a young Stallone and even played Stallone's kid in one of the Rocky movies.They already did that in Rambo 3
Who would make a good Rambo though?
