Puss can't defeat Death (no one can). He just fought off Death this time around. That's why Death says "You know we'll meet again".

The point was that Puss was humbled. Death literally puts the fear of mortality (death) into Puss's conscious. Puss now knows that he's not invincible. That was his character arc.
