Do you have some kind of representative or liason who put you in the position? Someone who can advocate on behalf of the program that got you there? You have a limited schedule for a reason and that was agreed upon when you started. Do you have that in writing somewhere? She is trying to use you, which might be good if it was worthwhile experience, you were getting paid for your extra time, or you were seeing this as a future connection - and you had the time to do it.
Since none of that seems to be the case, you or the program manager or some other rep need to re-state the agreed upon plan for you to be there.

I'm just a bit hesitant because I don't want the next 5 weeks to be cringe worthy (as more than it is).

I'm also worried if I complain that she'll "fire" me. The staff told me she fired the last intern for the same reasons I'm complaining about. They're even encouraging me to talk to the cordinator as well because they see the way she treats me.

I took summer school because I wanted to graduate early so if I don't do it now I'll have to wait until June (2016) to graduate and redo my placement in January.

Maybe email the coordinator to simply request a meeting. So nothing is in writing that could be forwarded to the hag supervisor. When you meet just ask for advice on approaching schedules. Or if you chicken out ask about other intern opportunities. She is gonna catch the hint and you can say you don't want to lose this by risking upsetting the supervisor and getting canned midway.

Supervisor obviously has a more flexible understanding of this arrangement than others do.
