"I'm not a rapper" - Heart of the City. Although it depends how you interpret that, he could just be saying he's not just a rapper, he's an entrepreneur/businessman/entertainer/etc
"I dumbed down for my audience, double my dollars" - making it seem like he cares more about the money than the quality of his artwork. But you can't blame him for doing what sells.
I'm sure Kanye appreciates/respects/like rap too, but again a suspect remark by him

no. if he's racist why would he surround himself by black people on a daily basis and perform predominantly black music. if he was really racist he would got fame and started making rock or country, he coulda done it and probably made more money.

No. Being a semi-talented white person in "black" music makes major money. See: Adele, Elvis, Justin Timberlake, Eminem and the list goes on. They're making way more money than the average country singer or rock star.
