Ambush? They started it. The Androids (17 and 18) didn't even want to fight them. Not just those sagas, but basically everything from the beginning of Dragonball. He's said in many interviews that he made up the story from week to week and never planned more than a chapter ahead.
But still I think it takes a certain amount of talent to make up a story as you go along and still have it be (mostly) coherent.
As far as Gohan not taking over as the main character tho, that was Toriyama's choice. Basically Gohan doesn't like fighting, and it's hard to have a main character in a fighting manga that never wants to fight. After all, it's not like Gohan is going to participate in tournaments or seek out strong opponents unless somebody makes him. So Toriyama decided it made more sense to keep Goku as the main since Gohan just wasn't about that life.
