That's just how receivers are taught to run their option routes. You go in or out based on how the defender is playing you.
The safety had inside leverage so Olave broke it out. Fields throwing it inside meant throwing it to coverage that's why it was easy for that safety to pick it off.
Had fields thrown it outside then the safety would have to run over Olave to get the ball.
