From the inside out:
2 jars of cajun injection marinade
Homemade roasted garlic butter on the breast
My own blend of seasoning (garlic, onion, pepper, 2 types of paprika, 3 types of chili powder, a shytload of dried herbs etc) and stuffed it witb onion, green onion, celery, garlic, and fresh herbs.

Put it in the oven about 1am and took it out around 7ish. Best damn turkery ever, not a dry piece on it :whew:

Hey, got the same plates I got.

I need to get some fancier plates to make my presentation better.

This was my Christmas Eve dinner.
Prime rib with porcini bacon sauce(that sauce was :ohlawd:)
Garlic red mashed potatoes
Zucchini and onion sautéed with teryaki sauce

Since I don't eat shellfish or seafood all I had was the green beans :yeshrug:

I made Salmon Provencal the other day and took pictures start to finish for my coli brehs.

The seared salmon filets

All my ingredients together

I seared the salmon and deglazed with some white wine and added some tarragon and parsley

Then I chopped my olives and capers and shallots and garlic and sauteed that together

Added the diced tomatoes and the wine and tarragon mix and a little red pepper flake and some lemon and tomato juice.

Made some vegetables for barley pilaf and cooked the barley and added the veg.
