I smoked a chicken for a couple hours, made crispy roast potatoes, squash salad with roasted veg and feta cheese served with green beans and gravy. The chicken was soooo moist, I could have eaten it without teeth.

I just so happen to have some squash and corn.
Can I get the squash salad recipe?

Anything can go in this salad, I peeled, cubed the squash, quartered some red onions, some whole plum vine tomatoes, bell pepper segments, broccoli florets and roasted them all in the oven. When cooled I added them to a mix leaf salad bag, mixed well and crumbled some feta cheese on top. Add dressing at the table.

I made a chicken salad with items I had in the fridge.

There is
Grilled Cho Cho/ Christophene and spring onion
Roasted tomatoes, onion, bell peppers and pumpkin
Boiled carrots and runner beans
I also made some pickled red cabbage
And I grilled some chicken thighs left over frkm when I made burgers a few days ago (See above)

I made a salad dressing with some cilantro, grapefruit zest, honey, grapefruit juice a splash of vinegar and some olive oil, whipped it up in the blender and lightly drizzled over the salad for some vibrancy and brightness.

Grated some fresh parmesan on top and chowed down. It came out better than I thought considering I had no idea what I was going to cook. I just knew I had those chicken thighs marinating in the fridge for a few days.

I made roast chicken cos I couldn't be asked to defrost anything else. Cheesy Bready pudding, pineapple salsa, and the obligatory gravy and veg.

Normally when I cook I dont enjoy the food as much because Ive been cooking and tasting, but this hit a different kind of spot I didnt know I had. When I finished I clasped my hands and looked up to the sky and thanked the lord for blessing my hands.

Spicy Adobo Oven fried chicken, parboiled rice (a bit healthier alternative to brown rice), pesto herb baked asparagus.

very simple recipe. Adobo sauce comes together very quickly. Soy, garlic, vinegar, bay leaves, ginger, lime/sake (optional)

Basically season your chicken/brine it, bake seasoned chicken in the oven to get it crispy and partially cooked, then take chicken out, drain the fat, cover with adobo sauce and continue baking.
It’ll fall right off the bone.

Have some broccoli or beans or asparagus on the side with rice and you are golden.

So I needed lunch for the rest of the week, didn't want microwave dinners, was walking down the isle and saw Zataran's gumbo. Ain't never had gumbo, so I thought why not? Whipped that up real quick with Zataran's smoked sausage.


What's the best way to make gumbo from scratch though? I want to make some using chicken and shrimp, a lot healthier.
