Anyone got experience running a small restaurant or diner family own?

Ive done the math and it makes sense.
If u target 100 customers a day(10 customers an hr)
At an average 15 bucks per sale ( low side)
Thats $1500 for the day pre tax(33k if your open 22 days out the month, 5 days a week)

3 to 5k for rental lease

6 to 8k of food cost(big variable)

The food cost is the biggest issues figuring out..
Depends of where/what I can get wholesale

Obviously I haven't factored in cost for marketing and design and all that jazz yet but the bare essentials for running a small business, if the opportunity presents itself, is there for growth

Probably could negotiate a cheaper lease during this time, but it is a huge risk.

I thought about going the catering route to start off. Like I'd deliver or doordash if orders are at least 50dollars. My wife made me some menus last night. Im not really interested in a full dine in restaurant at this time but I know in my area, it would do so well. The restaurants are terrible within 10-15miles but there's so many people with money here.
I need to read up more about home catering businesses in my county/state (Northern Va)

not trying to discourage just was making a statement. Good luck if you proceed too many hop in like “we can cook it’ll be fine” next thing you know shyt upside down

if it makes sense for you by all means go ahead and eat breh

Curry Chicken thighs & potatoes, vegetable rice, plantains, kale salad w/cucumbers and cherry tomatoes

All of my knives are trash so I couldn't cut the thighs the way I wanted. I don't like kale unless it's in smoothies but that's all I had.
