Being the greatest doesn't necessarily mean you have to have the longest career or be the biggest stat compiler. Not TE has ever been as dominant and had the impact Gronk has had during his short time in the NFL. He still has many years left in his career.
I'll do some assuming here, but I'm going to give him the benefit of the doubt and say he stays relatively healthy for the next four seasons. If he does that, he will very likely be SIXTH all-time in receiving TD's before he turns 31. Let's say he misses a season worth of games over that time period, he will likely reach that same milestone by the time he is 32 years old.
There is no upper echelon every down TE that blocks as well as him. His impact is insane.
I'd bet good money that he finishes in the top four ALL-TIME in receiving TD's, and I think if he can stay relatively healthy that he COULD possibly end up second. That's going to require him staying healthy, but I think it's definitely possible for Gronk.
No Shannon Sharpe?
Tbh Im a younger dude, started watching Shannon towards the end of his career.
As long as he stays healthy for the next 5-7 years I think he will go down as the best ever. He's a mismatch for any defender with his speed and is nearly impossible to tackle by any one player. Gronk is a freak of nature and he's basically a receiver with tight end size.

Brady+Gronk+Edelman+Hernandez+Amendola+Lewis+Blount.

So far he's had the same amount of 1000 yard seasons as Tony had in his career, and he's had 5 10+ td seasons in his 6 years in the league Tony had 3 in 17 years.
I saw Tony Gonzalez play and believe me he wasn't a feared as Gronk is and nowhere near the Blocker Gronkowski is.
If we're going by the numbers Gronk averages per season are way better than Gonzalez all across the Board.
And Gronk has been much better than Gonzalez ever was in the Playoffs as well.
Unfortunately trying to tear his ACL is the only way to Stop Gronkowski

Shannon Sharpe really only had a handful of "elite" seasons and was fortunate enough to stay healthy for most of 14 years. the problem with Sharpe however is that he would disappear when it counted.
Sharpe scored 62 touchdowns in 204 games. Gronk has scored 65 touchdowns in 78 games
Sharpe had 3 different 1,000+ yard seasons in 14 years. Gronk has 3 different 1,000+ yard seasons in 6 years.
Sharpe had 4 touchdowns in 18 playoff games. Gronk has 6 touchdowns in 8 playoff games.
the only tight end you can rank ahead of Gronk is Tony G and that's only because Tony G. had 17 healthy seasons. not because he was more dominate overall. if Gronk can stay healthy for a few more years then he will easily be GOAT.
