Do y'all use a grill basket for your fish or just throw it on the grill?

I don't have a basket, I have a tray...I can put planks in the tray to and they heat them up and make them last longer.

I don't think I've ever done fish on it. My lady might have (she gets down on the grill too. She's actually damn good. Her chicken is fire, she knows how to do it) I bought one of these and maybe used it once or twice. Probably for vegetables or steak cutlets more than anything.

When I do fish I do it like

That's beef bacon wrapped around it. The grease slides down and coats the outside which crisps up that outer skin and the salts permeate...yadda yadda...anyway it's stuffed with seasoning, lemon, herbs, butter.

I could do a basket but you can flip it over and nothing is lost.

Jerk leg quarters...:ahh:

I have a couple of bundles of quarters in our meat deep freezer. Cause that's what you use for jerk chicken. I planned on making my jerk, but I don't want to. It's too time consuming. Maybe I'll get motivated again. We will see. Anyway a couple weeks back my lady grilled up some quarters. She's getting good enough she don't and won't need me.

Just bought 2 steaks that totaled $130 at Wegmans

30 day dry aged prime tomahawk ribeye

30 day dry aged prime porterhouse

Prolly gonna reverse sear the tomahawk on my grill, or trim the bone and then smoke it before finishing it off with a sear

I'm thinking the cast iron inside for the porterhouse

I want either a Kamado Joe Kettle or a Weber Summit. As I am becoming a better cook, I need something a little more versatile than the Akorn.
