The only way I've found to counter this is to choose a dummy play on the play select screen and then audible twice pre snap. Audible once and the CPU will counter to the perfect play, but audible twice and they won't change their play again. Been doing this for years with solid success

Devs always put some under the hood shyt to create a false sense of difficulty in sports based games.

The second to the last difficulty has the fairest simulation.

They have to tone down the LBs and DBs INT ability. Leading the pass feels broken because the defense catches up and jumps 15 feet in the air to somehow make the perfect interception.

Also the DBs breaking as soon as the ball is passed regardless of if they had eyes on the ball or not is ridiculous as well.
Legacy code issues continue to ruin the experience when you're playing against good people
