But you're ignoring the fact that the basic components of someone's cost of living don't vary based on their monthly cash flow. Those fixed expenses (rent, utilities, car insurance, etc.) need to be covered every month.
And if you're working as a waiter or in other service jobs, its not like there's much of a cash reserve for you to dip into to begin with.
Over months or years, people (hopefully) build up cash reserves to tolerate bad weeks, bad months, etc. - and then take the attitude that you're suggesting.
But in those first couple of months (or first couple of years, depending on what you're fixed expenses look like - people with children have it even tougher) - a couple of bad weeks can send you into a financial death spiral.
That's what drives the emotional reaction. And as far as spitting in people's food...nobody condones that, and if it isn't a crime, it should be.
But a customer getting good service then turning around and zeroing out that tip line on the check? Yeah, I'm not gonna have any problem with that server having something to say about it.
Public shaming is powerful shyt. I support any service employee confronting cheapskates in front of their friends, families, and onlookers over a bullshyt tip

Eh Im on my last days doing a job where I completely depended on tips. Mainly white people came thru and Id say like 25% of those people at most that came thru tipped. On a FANTASTIC day, itd be like 50-60%. But alot of cacs really have the justification that they dont have to pay and you doin them nikkas a service. I was a carter for a restauraunt, taking fellas from a parkin lot that was like 500 feet away.

People really should work in the industry just for a month to see what it’s like. I would never fukk with someone’s food or any of that foul shyt. Especially based off race or before I even know them.
BUT if you don’t tip anything, you are a piece of shyt. Flat out. If you can’t leave me anything, it’s personal. Getting shytty tips isn’t a good feeling, but it happens. It’s expected. But leaving nothing at all?? And next time you come in, I will spill a drink on you and make sure you have the worst experience so you never come back. Y’all in here acting like people aren’t gonna remember how you treat them why would someone waste their time serving you for free when it’s another table gonna leave them a 30% tip.

You’d have unenthusiastic drive thru workers bringing you shyt and not getting ya refills. It works both ways.
