i ran away at 17 to oregon and went to a culinary school there. i studied patisserie and baking. knife skills are something you pick up or you dont. i do chop fast but its because i work fast. when i graduated, my first job was washing dishes at a dive bar. culinary school is for suckers. $54k to go there.A lot of mirepoix
