Mass extinction "events" actually take place over a period of time - they're just precipitated by a specific action, like a meteor or asteroid strike.

And I think it's important to understand that not all dinosaurs went extinct, and that many other animal species survived these events and continued to evolve. Birds fall under the category of dinosaurs as well.
