Basically, the writers were gonna reveal tha reason why Rick is so crazy n doesn't care. But the writers said someone on Reddit figured it out. It's been speculated that the big secret is that 1.Rick found out he is a cartoon show 2. Rick is actually Morty from the future 3. The real Morty is older n dead n that Rick plucked a younger Morty to take his place out of guilt.

I was at a comic con in Raleigh a couple weeks ago and they had a Q & A session with Justin Roiland.
He said a lot of fans noticed a shift in the show which was due to the writers realizing that the punchlines for most of the jokes or episodes was something violent or dark. For the new season they brought on some new writers, a few of which are women, and he said that the team is much better this time around but the tone of the episodes is evolving.
As for the theories, a bunch of people asked him directly about the ones you mentioned, and more, and he refuted all of them saying that none of them were true, in the sense that the writers didn't decide to include any of the theories intentionally. He went on to say that when he caught wind of some of the theories online he decided it would be better to let the fans decide on their own what is real and what isn't within the show because it allows the conversation to continue among the fans.
He didn't want to commit to any characters from season 1 and 2 returning. He also said he absolutely did not want to do any multiple time line sort of thing where viewers would have to try and keep track of who the original rick and morty was or which versions of them are in which episodes.
