It was always said that pigs feet, chitlins, hog maw, and turkey tail was slave food. It was the scraps white people didn't want.
-I was about to say the same thing. Never saw any of that called slave food.

That's what "living high on the hog" meant. You were eating the "better" parts of the pig.

Collards are strong plants that can last almost all year depending on where you live, you just have to cook a long time to soften them. Yams are from Africa. Lots of soul food is from what slaves could get acces to.

I've always looked at slave food as derogatory, parts of the animal white slave owners didn't eat.

I was at a fine dining Chinese restaurant in Toronto and they had pig intestines on the menu so I don't know if poverty is the reason either
back in the day before refrigeration, people ate all parts of an animal to avoid wasting it, so you don't die from starvation. The reason that restaurant had it because it's a "delicacy" the way the Chinese would prepare it for their customer base which I am assuming is WHITE. White folk especially Canadians don't know shyt about that lol.

Chitlins slap when you got on them side with some hot sauce, vinegar and pepper. I dont know whats this notion of downplaying it as slave food is with nikkas.

It's food like anything else, It's part of fba culture if you grew up in the south, your grandmother cooked some all the time during the holidays.
