26 years ago I went to my Nigerian potna’s home and his mom cooked up dishes that tasted a lot like Louisiana food.

The pig’s feet, chitlins, etc., I could see being scraps, but a lot of what we eat and the way we season come from Africa. Bet y’all FBA brehs had a plate full of tether food and didn’t realize it.

Well, when people say that, they are talking about certain cuts of meats in particular, such as neck bones, chitterlings, etc, not side dishes such as yams, dressing/stuffing, greens, cabbage, etc.

Specific cuts of meat were considered scraps because of how scarce they were in meat-to-bone ratio, but also throwaways that slave owners didn't care to eat. Also, some of those cuts didn't have the proper nutritional value as some of the heartier cuts of meat.

Some of the dishes OP mentioned were not widely available to slaves until after slavery ended and freedmen and women were able to culturally incorporate these foods, which some later became known as Soul Food and commonly associated with Black American cuisine.
