i must be lucky i've never had the game freeze once and i bought it on release day.
It tends to happen when you have created stuff in your Universe. I have like 70 CAWs many of which are textured, Created Championships with created logos on em, custom entrance music, custom rings, custom PPV logos....everything. I wouldn't even know where to begin deleting so the game behaves properly. And if I delete it all, there's my fun with the game. Might as well toss the disc. I hear it happens to fat Xboxes more too, and I have one of those
