Underrated option would be Napa Valley wine tours if you just want to relax and enjoy beautiful views.
Another underrated option to me are train trips across multiple states. I took a train from Chicago to the west coast a couple years ago and it was amazing. Unique experience witnessing parts of the country you've never seen before. Some of the stops we made were in small towns and there would be rural people (black and white, some Native Americans and Hispanics too) in chairs watching us. Like we'd watch Netflix or something, they just sit out there people watching folks visit their towns. I thought it was pretty dope. Not gonna meet any dimes doing this but it's an experience I really enjoyed.
