What kind of culinary philistine do you have to be to just toss jalapenos/salsa completely into the wind, and the necessary dairy component to help balance it out as needed? ON TOP OF WHICH you also chuck out the healthy fat option in guac to balance out the fats in whatever ground meats are used?

Or pickled, tomatoes, etc. I left a bit out.
