You need to watch Panty and Stocking With Garterbelt post-haste. Hiroyuki Imaishi, the guy who directed Dead Leaves and the character designer and animation director of FLCL, directed this series and it's goddamn great. Right up my alley.
I only read the manga, but it's probably one of the more intelligent Shounen series out there. The way Togashi plots out his fights and conflicts are tremendous (The manga actually had an extremely compelling arc about an election of all things. No fighting in that plot either) and the way that he uses the character's powers are very creative as well. I will say that the Greed Island OVAs kind of suck and the Chimera Ant arc (for the manga readers) might be offputting at times (I can't imagine anyone on this board being content with the way with the villain was disposed of. I kind of liked it, though), but it's well worth checking out.
The reason that Hunter x Hunter is a big topic now is because they're remaking the original anime, which basically stopped dead in the middle of the manga's best arc and had to be completed by OVAs. I haven't watched it, but it's apparently quite good.

FMA: Brotherhood (to be truthful, I never stop watching, when I get to the end I just play it from the beginning all over again)
FMA OG series (Even tho it deviated from the manga halfway thru, I still enjoy the direction it took, also an anime that I never really stop watching)

I've been re-watching Samurai Champloo and Ghost in a Shell SAC: 1 & 2 gig

I've never finished that anime where that main character was in a gambling debt from a co-signment of a friend and he'd have to win these crazy trials of life or death while rich people watch so he can pay his debt off and eventually get money. It was Kaiji, I think. I been meaning to finish that one.

yeah, Kaiji was great. You should watch the whole "Gambling Trilogy":

My favorite out the bunch is Akagi. It's easy to get into even if you don't know how mahjong is played. Hell, I still don't. Akagi's in my top 10 though.
but mahjong is too... eastern a subject for most. If you're like most, at least check out One Outs.

Just started watching My Little Sister Is Among Them. Bored due to recent events so i lowered my standards. shyt is the dumbest premise i've ever heard of. a rich kid's father dies and in order to inherit the business he has to complete classes and find and marry a wife. mother enrolls him in an elite high school and his father's illegitimate child is also going there and she's trying to date this mofo. there's like 5 chicks he's talking to and one of them is his little sister and he doesn't know who it it.
