It's like you said previously it's an Italian thing like Juve did with Pirlo playing with Vidal and Pogba/Marchisio. The problem is Jorginho's vision and passing range is pre school compared to Pirlo. Sarri is doing everything to justify the splurge for Jorginho, when I think Fabregas should get more of a chance, with Kante and Barkley/Loftus Cheek playing with him.

I didn't want to that one.

So while it is easy to pin everything on Sarri and son, the team is still a work in progress. Let's not forget the team as a whole had a lack of pre season together (Sarri got the job, what a month before the season started) and Hazard, Kante and Kovacic had about a week, if that with him.
