My first shift was tonight. I got to stop doubting my skills as a cook. I can do this at the highest level if I remain professional and continue my education. I made plates that looked expensive tonight, over and over again.
I still have 7 years of training to receive before I can call myself a cook or chef. I can do this shyt, I'm practically self-taught. Every cooking job I get closer to the top of food. Every place I've worked at is award winning high-end food. I've done high volume kitchens, in-house, catering, and now I'm doing small plates paired with beer. I can't wait to finish school because I'll be more confident in my ability to cook. I have to make sure I can support myself through school. It's tricky to find the time, but it's necessary to make real money. Anybody can cook, it's not hard, but managing a kitchen and staff is where the money is at.
PS: I'm the only black man I see doing what I'm doing where I've done it. I'm also the youngest. Shout out to soccer for giving me discipline. In soccer, we're taught to accept all challenges and challenge yourself every day. I take that mentality into everything I do. It's paying off now.
