Self esteem is acknowledging tha fact tht you're fat, and either doing something about it, or making peace with it. What you're describing is just called being defensive, which is rooted in insecurity. Tha fat comments hit them in a vulnerable spot, and now tht makes them feel some type of way and they feel tha need to save face and be on tha defensive.
